Moonshine question please help?

ok im using a 10 gallon water jug from a water dispenser to put my mash in and im using a 12qt stainless steel pot to use to put the mash in then running that threw copper line. i wanna know how much of each thing (yeast corn meal sugar) should i use to fill this up lil more then half way and Also can i use tap water or do i have to use distilled water for the mash
